I remembered this juice and decided to replace the diary milk with a plant based milk

What came to my mind is one of Nigeria’s easy to find crop,

Can you guess what that is?

Ok it’s tiger nut

Tiger nuts is known for its milky, slightly nutty and sweet taste

It is used in making tiger nut milk, and tiger nut drink (kunu aya) and tiger nut flour.

Today I am replacing the normal dairy milk with tiger nuts in this recipe.

Aside from the nutritional benefit of adding milk to ugu leaf juice, which is that milk contains protein and tiger nuts have lots of protein.

The ugu leaves juice alone has a taste that makes it difficult to drink in order to make it easy to drink, add milk to improve the taste and makes it more palatable.

While ugu leave is a source of iron the milk (tiger nut) is a source of protein
