Pap (Akamu): TheTwo Easy Ways To Make The Perfect Pap

Pap (Akamu) is a popular meal in Nigeria.

Pap known in southern Nigeria as Akamu, in western Nigeria as Ogi and in northern Nigeria as Koko made from Corn.

Guinea Corn and Millet are used to make Guinea Corn Pap and Millet Pap.

This is one of the meals you can make with dry corn grown in your garden.

This popular meal served alone or alongside other meals like Moi Moi, Akara (beans cake) Beans Porridge, Okpa, Fried or Roasted Plantain to mention a few.  

Pap taken at any time of the day but popular as breakfast or dinner meals

Great cereal for babies,

Served also as a dessert too.

Pap is easy and fast to make but it needs to be done right.

Usually preferred completely smooth without lumps and not too watery

to achieve these careful measures are as such:

  • Adding the right amount of water, ensuring the cold mixture is not watery
  • Always use boiling water
  • Pap(akamu) should be at room temperature when mixing in water (if you keep your pap in the refrigerator or freezer allow to defrost before using)
  • If the pap gets too watery, you can place the stainless bowl with pap on heat and allow the pap to thicken, make sure you stir while on heat.

Ingredients

  • 1 Cup Crushed Pap/Akamu/oOgi (at room temperature)
  • ¼ Cup Water (at room temperature)
  • 2 ½ Cup Hot Water (boiling water)
  • Honey (optional)
  • Milk (optional): Healthy options are Tigernut, Almond milk or any plant based milk of your choice.

Instructions

    1. Pour the crushed pap into a bowl (or whatever form your pap maybe).
    2. Add water at room temperature into the bowl to make a smooth paste (if pap is already in a paste form skip this step).
    3. Place water in a kettle or pot and allow to boil (Kettle is preferable, it makes it easier).
    4. Add boiling water to the smooth paste (ensure you stir continuously while pouring in the boiling water).
    5. Continue stirring in boiling water until the mixture thickens (stop adding water and mix the pap properly when the desired consistency is reached).
    6. Pap is ready to be served immediately you can add honey and milk to taste.

You can’t go wrong in making pap/akamu/ogi using this method, I recommend this if it’s your first time.

Ingredients

  • 1 Cup Crushed Pap/Akamu/Ogi (At room temperature)
  • 3 Cup Water (At room temperature)
  • Honey (Optional)
  • Milk (Optional): Healthy options are Tiger nut, Almond milk or any plant-based milk of your choice.

Instructions

  1. Pour the crushed pap into a pot or stainless steel bowl.
  2. Add water at room temperature into the pot and mix until a smooth solution is formed (add water little by little and stir to get a smooth solution).
  3. Place pot on heat and stir (as it starts to boil it thickens).
  4. Keep stirring until the pap thickens evenly, allow to boil for a little while. (If it’s too thick add little water to lighten up).
  5. Take the pot off the heat.
  6. Pap is ready to be served immediately you can add honey and milk to taste.
